Shin Asahi Tofu

After soaking the raw ingredient soybeans in water, they are crushed, boiled and squeezed to extract their liquid. By adding bittern to coagulate the mixture it turns into a white and soft state, resulting in what is called tofu. Kori tofu, a type of preserved food, is made by freezing this tofu, curing it at low temperatures and drying it out.

Our Kori-tofu Shin Asahi Tofu achieved a lower salt content following a rethinking of our manufacturing process that lead to the replacement of sodium bicarbonate with potassium carbonate.
Half of the nutrients are vegetable proteins. There is also plenty of calcium (490 mg/100 g) and iron (5.8 mg/100 g), essential for staying in shape and keeping healthy.

Kori-tofu had a very low sugar content. Sugar is a source of energy and one of the required nutrients for our bodies, but consuming too much carries the risk of leading to diabetes and obesity. Using Kori-tofu instead of flour when making sweets or bread can help cut sugar contents with ease. It matches well with meat and other ingredients, and depending on the arrangements, can be used in a wide variety of recipes.

A noteworthy feature is that half of the nutrients of Kori tofu is vegetable protein.
